Couldn't sleep, frittata.

When I can't sleep I often find myself thinking of the foods I will cook for breakfast or will eat throughout the next day. Last night I struggled to sleep and my thoughts were set firmly on frittata and how I will cook it.

Frittata is one of my go-to foods, it's easy and fairly quick. Like an omelette but more.

The things I used today: frying pan, a bit of oil, 1 garlic clove, 1/4 of an onion, 1/4 of a pepper, some cherry tomatoes, 1 quite big potato, a handful of spinach, 3 eggs and a slice of cheese.

  • Started by putting the oil into the pan and turning on the hob, it's electric so takes a while to heat up.
  • Squashed the garlic with the side of my knife, then cut it into little pieces. Added this to the pan.
  • Cut the half onion in the fridge in half and cut a quarter of the pepper,  then put the rest back into the fridge. (It is around this time that I put the kettle on for my cup of tea.)
  • Sliced the onion and pepper into small pieces and added to the now quite hot oil and garlic in the pan. (Put the tea bag and sugar into the cup in preparation) Also added the cherry tomatoes cut into halves.
  • While the veg was softening and cooking, I sliced a potato into thin pieces and thought about how great it would be if potatoes could be leek shaped to always have uniform sized circle slices.
  • Added the potato to the pan, waiting for the potato to cook is the bit that takes the longest. (This is when I finished making the cup of tea and had some sips.) Good time to turn the grill on.
  • Took a handful of spinach from the fridge and added to the pan. Then stirred it all around to make sure all the veg was evenly mixed.
  • While leaving all the veg to cook I got the eggs out of the fridge and whisked them in a jug.
  • When I got bored of waiting for the potato to cook I poured the egg evenly over the pan.
  • Got a slice of cheese from the fridge and tore it into pieces which I lay over the pan.
  • When the egg looks like it has cooked around the edge and is working its way to the centre is the time to turn off the hob and place the pan under the grill.
What it looked like out of the oven.

  • Then I went and sat on the sofa, finished my tea and forgot I was cooking. When you suddenly remember, get up and check that the top of your frittata is a golden brown turn off the oven. I cut it into slices normally 6.
  • Put 2 on a plate knowing full well you are going to go back for more. And enjoy.

I wish I could take photos that made it look as nice as it tasted.
